Does AAC to MP3 reduce quality?

A small amount of additional quality loss is introduced in any lossy-to-lossy transcode. At high output bitrates (192+ kbps) this is very difficult to detect. Keep original AAC files if quality is critical.

Why do some car stereos only read MP3?

Older car audio systems (pre-2010 roughly) licensed MP3 playback hardware, which was standard at the time. AAC support was added later and many budget head units still don't include it.
